Usually I’d prefer to cook steak on a barbecue grill, however I wanted to cook one indoors, so here’s how it’s done. Note there’s still a lot of ‘smoke’ from this, so open all your windows.

6-8oz filet mignon steak
one cast iron skillet
salt & pepper
4 tablespoons extra virgin olive oil
2 tablespoons butter

Remove the filet mignon from your fridge and let it sit on the counter about 25 minutes until it’s at room temperature – this is really important, so don’t skip it.
Pre-heat oven to 450°F (about 230°C) on bake.
Season the filet mignon with salt and pepper on both sides – not too much, maybe 1/8 teaspoon salt and pepper per side.
Heat a suitably sized solid cast iron skillet over high heat (don’t use a non-stick pan or anything with a plastic handle).
Add the 4 tbsp olive oil to the pan and let it get very hot.
Add the filet mignon to the hot pan and let it sear for 2-3 mins each side. Do not move it around in the pan or flip it over and over, just do one side, then the other.
Once seared, add a tablespoon of butter on top of the filet mignon.
Move the entire pan with filet mignon in it to your preheated oven and bake in the center of the oven 3-4 minutes, no turning. This is for medium rare filet mignon. Cook longer according to your preference.
Remove skillet from oven, return to stove top on medium heat. Add another tablespoon of butter and keep it on the heat just enough time to baste (less than a minute). You can also add a bit of onion powder, garlic, thyme, or even some red wine if you wish.
Place filet mignon on plate and allow to rest 5 minutes.
Spoon any juices from the pan over the filet mignon and serve.
